This just in: German pancake! Yesterday at Trader Joe's I found some yummy looking blueberry sauce, so of course this morning I wanted to try it out. I got the recipe for the German pancake from my Chinaberry cookbook. It's crazy easy.
German Pancake
1/4 c. butter
3 eggs
1/3 c. flour
1/3 c. milk
1/2 t. vanilla extract
Put the 1/4 c. butter in pan (I used a cast iron skillet--I think it's about 9 inches) in a 450 oven and let it melt. While the butter is melting, whir together the other ingredients in a blender (I don't know if the blender is important or necessary but I did it, just to be sure). Pour the batter into the skillet of melted butter and return to the oven for 15 minutes or until the edges are brown and crispy.
You can squeeze a lemon wedge over it and dust with powdered sugar, and we also used some of the blueberry sauce.
The boys were not as impressed as I was. I find that adults are the ones who really like things with crispy edges and children like soft interiors. Go figure. Fortunately Ken was eating too, which prevented me from finishing off the rest of it entirely on my own.

it does look very delicious!
Oooooh that looks so yummy! I love your cast iron skillet, I've never seen them with colors on the outside!
Now I must go hunt down some food! ;)
That looks great, what a yummy breakfast.
Thanks so much for this recipe Mary Beth. We made it this morning and it was as delicious as your photos made it look and super easy. We will be making this again and again. I have put a link to your recipe from my blog, hope you don’t mind.

I made this this morning (Sunday) and it was DELICIOUS! I loved the way the butter seemed to carmelize...oh so good. Thanks for sharing the recipe!
We put thinly sliced apples and a bit of cinnmon and sugare on ours, they are delicious!
That looks super tasty! I going to have to try it soon!
I LOVE these! We grew up calling them Dutch Babies or Baby Cakes :)
Your recipe is a slight variation. Mine doesn't call for vanilla but that sounds good. I'm definitely going to add that next time.
We make those for all birthdays around here... They are a special treat. Your's looks delightful! I haven't seen the blueberry sauce from Trader Joe's. Must look that up. ;)

Isn't that funny! Give or take an egg or two and that's a british Yorkshire pudding. Looks good anyway.
Loving your scrap fabric projects too :o)
We call it a Dutch baby--and healthy it up a bit by using white/whole wheat flour and putting a layer of fruit in the skillet. Frozen blueberries or blackberries, fresh peaches, sauteed apples...
