saturday morning breakfast

This just in: German pancake! Yesterday at Trader Joe's I found some yummy looking blueberry sauce, so of course this morning I wanted to try it out. I got the recipe for the German pancake from my Chinaberry cookbook. It's crazy easy.

German Pancake

1/4 c. butter
3 eggs
1/3 c. flour
1/3 c. milk
1/2 t. vanilla extract

Put the 1/4 c. butter in pan (I used a cast iron skillet--I think it's about 9 inches) in a 450 oven and let it melt. While the butter is melting, whir together the other ingredients in a blender (I don't know if the blender is important or necessary but I did it, just to be sure). Pour the batter into the skillet of melted butter and return to the oven for 15 minutes or until the edges are brown and crispy.

You can squeeze a lemon wedge over it and dust with powdered sugar, and we also used some of the blueberry sauce.

The boys were not as impressed as I was. I find that adults are the ones who really like things with crispy edges and children like soft interiors. Go figure. Fortunately Ken was eating too, which prevented me from finishing off the rest of it entirely on my own.

Oooooh that looks so yummy! I love your cast iron skillet, I've never seen them with colors on the outside!

I LOVE these! We grew up calling them Dutch Babies or Baby Cakes :)

Your recipe is a slight variation. Mine doesn't call for vanilla but that sounds good. I'm definitely going to add that next time.

We call it a Dutch baby--and healthy it up a bit by using white/whole wheat flour and putting a layer of fruit in the skillet. Frozen blueberries or blackberries, fresh peaches, sauteed apples...
