I felt sort of the same way as you, but found the duck eggs to be delicious and pretty similar to the chicken eggs. She said they don't keep as long because of a more pourous shell, but that seemed to be the only difference. So I would scramble them with chicken eggs. I don't think he ever noticed. If he did, he never mentioned it. I would also use the eggs for baking. Backyard eggs are the best. :)Michellehttps://www.blogger.com/profile/04679457147333535719noreply@blogger.comtag:blogger.com,1999:blog-8224074171829015497.post-31250253737951609282009-07-08T12:56:14.856-07:002009-07-08T12:56:14.856-07:00I have heard, from the guy we used to get our eggs...I have heard, from the guy we used to get our eggs from, that duck eggs are GREAT for baking - they have extra fats or something in them, to make baked goods fluffier.~Heatherhttps://www.blogger.com/profile/17950987396443867255noreply@blogger.comtag:blogger.com,1999:blog-8224074171829015497.post-79195905560180428772009-07-08T12:55:58.760-07:002009-07-08T12:55:58.760-07:00I have heard, from the guy we used to get our eggs...I have heard, from the guy we used to get our eggs from, that duck eggs are GREAT for baking - they have extra fats or something in them, to make baked goods fluffier.~Heatherhttps://www.blogger.com/profile/17950987396443867255noreply@blogger.comtag:blogger.com,1999:blog-8224074171829015497.post-54237290521515407052009-07-08T09:11:08.228-07:002009-07-08T09:11:08.228-07:00The postcards are beautiful!
