Apple "Cupcakes"
I made these apple "cupcakes" as part of a little family celebration we had tonight. More about the celebration on Monday. For now, I wanted to share this cute treat with you. This is a Martha Stewart idea in one of those "Good Things for Kids" magazine they put out from time to time. I can't find it on the website, but you don't really need a recipe anyway. Cut apples in half horizontally and core them. Spread with either peanut butter or cream cheese (sweeten the cream cheese by forking it through with a little sugar) then go crazy with the toppings. I used cashews, coconut, raisins, mini chips, and teddy grahams. Serve them in cupcake liners--that is really what brings the cupcake effect all together. I honestly wouldn't mind having a small batch of these in the fridge for quick snacks. So much healthier than real cupcakes, it goes without saying.
And here's how we spent a good part of our morning: the "splash" game, which involves tossing the gnomes and the felt ball into the body of "water" (the blanket) and saying "splash" each time. Big fun for all of us. I will say, it gives me a thrill when they play with the handmade toys.
Both boys, particularly Rainer, love picking the wool stuffing out of the gnomes. Hey, whatever works for you. I admit to enjoying re-stuffing them over and over.

What a great idea! I don't care for the usual cupcakes which seem to be served at all kid parties and can't wait to try these.

What a great idea for cupcakes. We are having a healthy eating month in may which means no cakes or biscuits for after school snack but fruits/veg instead so these will do the trick I think!

I made those cupcakes for my daughter's birthday and they were a huge hit!
I'm "snack mom" on my son's last day of preschool next month. This is the perfect snack to bring because it meets the "healthy" requirement (though it's a cupcake in the kids' eyes). And if the cut part of the apple gets brown, it will be covered by a creamy yummy disguise. Thanks for sharing!
These look awesome! And it's all about presentation with the little ones, so I'm sure they'll be a big hit at our house!
