what have you been cooking?

What have you been cooking and eating lately? I've been feeling busy and not that motivated to cook, but I do still get around to trying a few new recipes every month.  The top photo is this kale salad.  I adore the Everyday Food cooking videos and they inspire me so much to try new things.  I liked this kale salad.  It didn't seem to be a winner with the family, but I think a nice  salad once in a blue moon is a good thing to have, even if it's not a favorite with everyone.  I served this with green smoothies.

Another Everyday Food video that I've made twice already is the meatball beef stroganoff.  Rich, but so so delicious.  It's a huge upgrade from my old way of making beef stroganoff, which involved a can of cream of mushroom soup and canned mushrooms (embarrassing but true)!  Now I'll never go back. 

But that's not what's pictured.  The second picture shows an old classic we go back to again and again--sausage linguine.  I'm trying to find a link--I'm sure I've blogged about it in the past but I can't find it.  Maybe I should blog the recipe?  It's so good for company or a celebration but also works for an everyday family dinner.  It's a winner and loved by the whole family.


simple greek salad (for lunch)

In lunch news--I'm currently reading this book and it inspired me to make a very simple Greek salad for lunch.  This travels well too for an at-work lunch (I add the feta just before eating).  Cucumbers, cherry tomatoes, some olves and some feta.  Dress with salt and pepper and olive oil and a few drops of vinegar.  Delish!

Mmm, that kale salad looks good. I've been very out-of-the-mood to cook for a long time. Usually I get inspired with late-summer/early fall produce, but it did not happen this year. We have lots of greens in our garden still, so I'm trying to incorporate them into our meals: last night a fritatta with potatoes and broccoli leaves (because the oldest who hates eggs with cheese is at camp this week); last weekend, a stir-fry with udon noodles, broccoli leaves, roasted red peppers, carrots and toasted sesame-ginger dressing.

P.S. I love that table runner. Have you blogged about it before. I have such a hard time putting together fabrics that don't "match" but I think it looks terrific! Maybe I will try to break out of that rut.

I'm going to try that beef stroganoff. I'm in a rut with my cooking. But I usually make a roast chicken once a week and then make stock from the bones and make soup once during the week also. I need to re-read some of my cookbooks and go through past issues of Everyday Food for inspiration.
