about the berry cobbler

berry-apple cobbler yum

Yesterday for my birthday I quickly threw together this cobbler from Lisa Leonard's blog. I love making desserts from scratch, but on this particular day I wanted something quick and easy. This cobbler fit the bill and it was delicious to boot.

Some notes:
:: I think the look of it is not as picture perfect as a regular cobbler crust but nonetheless we all loved the taste.

:: I used 5 green apples with a couple spoons of sugar and some cinnamon sprinkled over, then two bags of frozen blackberries on top of that. I'm embarrassed to admit that when dotting the top with the butter slices I ended up using two entire sticks of butter, because I didn't want any cake mix to remain dry and powdery. Oh well!

:: Faith and Ben both asked for this to be added to the recipe books I am working on for them.  I do think this would be a great dessert for college kids because it only requires one dish and clean up is pretty easy.

:: the leftovers are delicious cold with whipped cream.

If you make it, let me know what you think!
