muffins for breakfast

I didn't get to everything on my list this weekend, but I did make muffins for breakfast, as I had wanted to.

I've been seeing Catherine Newman's donut cake around the interwebs (here, for example). I very much want to a make this cake and serve it with whipped cream and fruit (as Catherine does so delightfully here), but in the meantime I was reminded of these muffins, which also have a donut-y quality to them plus a yummy cinnamon-sugar dipped top. I'm sure I've posted the recipe before, but I couldn't find it, so here you go:

French Breakfast Puffs (clipped from a Better Homes and Garden magazine a long time ago, probably the early 90's if not before).

1 1/2 c. all purpose flour
1/2 c. sugar
1 1/2 t. baking powder
1/4 t. nutmeg (we had fun also grating in some extra fresh nutmeg to supplement the 1/4 t.)
1/8 t. salt
1 egg
1/2 c. milk
1/3 c. butter, melted

 For the topping:
1/4 c. sugar
1/2 t. ground cinnamon {mix the cinnamon and sugar together in a small bowl}
1/4 c. melted butter

 Combine the dry ingredients in the larger bowl and make a well in the center. Combine the wet ingredients together, then add them to the dry ingredients and stir just until combined. Lightly grease the muffin tins (I only got 10 muffins out of the batch). Bake at 350 for 20-25 minutes.

When done, dip the tops of the still-hot muffins into melted butter and then into the cinnamon-sugar mixture until well coated. Serve warm.

Yummy. I make a muffin similar to these with diced apple in the batter which give it a different hit.

They look delicious! I make some similar to these called jam doughnut muffins. You put half the mixture in, then a small spoon of jam, then the rest of the mixture, so you end up with jam in the middle when you bite into it! Natasha x

I'm trying to get back to blogging after a long absence while my computer was a mess and then being repaired, but I'm really frustrated! Thanks for whatever help you can offer.

Oh, thank you Mary Beth. I'm still messing around with my blog (looks a disaster at the moment), and have started a blog for the parents in my class this week, so will really have to speed up the learning process! I'll let you know if I figure out anything helpful!
