a yummy vegan lunch

I had such a delcious vegan lunch yesterday, just thought I'd post about it. (I may have posted this before . . . if so, my apologies). It's Angry Chicken's slaw with magic sauce. (Magic sauce recipe here). I really really love this meal. I took this in my lunch a few times over the school year, but of course it was even yummier eaten at home. This is a layer of leftover brown rice (reaheated in the micro), slaw with cilantro, grated carrots, and a few sliced scallions (I followed what Angry Chicken does and dressed the slaw with a bit of rice vinegar and sesame oil), and the warm magic sauce over all. Top with peanuts. So so good!

I had two thoughts when preparing this delicious lunch for myself:
1) Eating healthfully is so much work! How much easier it is to grab some random leftovers from the fridge or make a pb & j, rather than chopping a lot of fresh veggies and making a sauce!
2) How very very delicious it was! And how I felt like a million dollars after eating this way (the green juice helped too).

Dieter was super cute. He helped me grate a carrot then peeled an entire carrot down to nothing, just for fun. I remember liking to peel carrots too, when I was little.

Oh my gosh! That looks so good! I never would have thought to mix some of those things together (rice and slaw). I've been meaning to try the Magic Sauce since the last vegan workshop- I will have to give this a go.

I agree that eating this way is way more work- but I have found that when I make up a grain salad or whatever- it lasts for a few days in the fridge- which makes other days easier. I also feel like I'm always doing dishes!

Wow... this is the first I've heard of the Magic Sauce, and now I have to try it. It actually sounds kind of gross to me, but I'm sure it's not. I'll have it for lunch today! I make my own peanut sauce for noodles on a regular basis (usually every time there's only a little bit of PB in the jar). I use PB, soy sauce, tahini, honey, sesame oil, & grated ginger. I put it on buckwheat noodles with julienned carrots & cukes, try it... it's super yummy!

Mmm, that looks super good. I've been eating rice cakes with jam and almond butter every day for lunch because I can keep it at work and not have to do anything at all in the morning food-related (except fill my water bottle and a container of blueberries for breakfast). But I could see making a salad like that at the weekend and keeping it in the fridge at work...looks much more satisflying than rice cakes!

i was just thinking of what to make with some leftover cabbage in the fridge and have always wanted to try her magic sauce. thank-you!
(oh, i and just use the carrot shavings with the cabbage rather than grating. i like the texture better that way.)

I had seen this sauce on her sight a while back and had forgotten about it. I literally just read your post, closed my laptop and mixed up a 1/2 cup batch to taste it. It seemed like an odd combo, but I had to try it. Straight off the spoon was pretty good, I will have make the slaw now or something else to try it on.

I have never heard of this recipe before and I think I am going to have to give it a try. It sounds absolutely delicious... Eating healthy is so much harder, and so much more satisfying, I agree!... How do you read with the words so small??! :)

Maiz--yeah, it is just on the border of gross vs. good. It certainly does look sort of gross . . . but give it a try. If you like peanut sauce, I think you'll like this. Your version sounds so yummy! I will try it!

Chris--yeah, it occurred to me I just should have used the shavings (instead of letting him peel them into the sink). Next time I'll do that.

Knitter Mama--I don't know how I read such tiny print. Highly motivated, I guess. On this occasion I was reading "Dinner, A Love Story," one of my favorite and well written blogs.
