welcome zucchini season

zucchini circles


The zucchini season is well underway here, and I am loving it! (We are still waiting patiently for our tomatoes, though). The zucchini circles pictured here are from the book Honest Pretzels. They are yummy. (The children wouldn't eat them).

Also made so far: zucchini soup (x2), zucchini bread, zucchini chocolate chip cookies. I'm waiting on those tomatoes to make my favorite zucchini pasta. How about you? What can you not wait to make with your zucchini harvest?

a yummy simple recipe: 5 or 6 small zucs/squash chopped in chunks, 1 medium onion chopped, 1ish cup cheese, 1 can cream of "whatever you choose" soup, buttery type crackers crushed, butter. saute zuc/squash & onions, add cheese & soup and stir till melted & creamy. pour into pyrex. top with cracks and cut small pats of butter and spread on top. bake at 350 till brown and bubbly....about 20ish mins! really yummy & not healthy BUT sometimes you just gotta give in to that yummy stuff....just take a walk around the block after dinner!

It's a long time till zucchini season here, but we've never longed for spring like this year in Christchurch. Anyway my favourite thing is to make zucchini fritters and serve them with a feta/sour cream dip. So yummy!

I love zucchini! Simply battered and fried, it doesn't get any better!

Definitely need to make zucchini bread from the two zucchinis I was able to harvest before both of our plants decided to die on us. Not sure what that was all about, but I am bummed. Every year I make loaves of zucchini bread and freeze them for the year to come. Don't know what we will do this year!!!! Darn.

We are also waiting for the tomatoes, so we can eat them with our yummy cucumbers which happen to be ready. Now if the carrots are ready around the same time, we'll have some yummy salads.
