I'm happy to say we did almost everything on both the "dreamy" and the "practical" lists for this weekend. I am feeling so much more energetic. Took the boys to the beach today (instead of the park), and even though it was a short time it was really nice. Next week we will go and stay much longer.

I made three lists today while cleaning out/neatening the pantry. I decided to list all the canned food I use to use up and post it on the fridge. I don't want to be one of those little old ladies who has decades old food in her cabinets one day. I'm so excited that with this list I can use up everything in the next couple weeks. I'm feeling very thrifty and green. I was so happy with the first list I decided to make one for the freezer and one for all the beans/grains/nuts that need to be rotated "into our bellies" as well.

I have a lot of nuts that I didn't use up for Christmas baking. Any ideas of what to use them for, other than cookies and granola?

I love all your blogs. I have been following them for a while! I know you have mentioned before about how long lunches take you to make at night. I was looking for some new fresh ideas for the kid's and hubby's lunch. Any suggestions?

nut butter. or mix them up into homemade lara bars

Mix them up with a little bit of grapeseed or canola oil and maple syrup (maybe a dash of cinnamon)and get the nuts in an oven til done. Great as a snack or on salads! YUM!

I dry fry them in a pan and then add tamari. Turn the heat off and keep stirring until they are coated. Cool and munch with drinks or sprinkled on soups or salads.

I love a veggie curry with cashew nuts. Or a winter hotpot really suits hazelnuts and walnuts. How about putting some in lunchboxes?

Make some baklava, you can use a variety of crushed nuts. Delicious!!

You can make a nut crust for quiche, or add nuts to a pastry or crumb pie crust. You can also add them to a dessert crisp topping. My husband eats nuts in his daily lunch salads. Zucchini nut loaf is another one. One my of my favorites used to be to use nuts in an "Adventist Loaf" (one example here: http://northbrooklynsda.org/recipe_43.html vegan style here: http://www.veganlunchbox.com/loaf_studio.html) That was great until nut allergies invaded my family. Then there are nut milks and creams made with almond or cashews.

Freeze the nuts in the freezer until you want to use them.

I really like your idea to make a dreamy/practical list! And about the leftover nuts, if your boys will eat nuts you could add some cranberries, raisins, maybe M&M's, coconut, etc. & make a big batch of your own trail mix, then you could fill up those snack bags for their lunches.
