after trick or treating

I had healthy baked goods on hand Sunday night to greet us after trick or treating--for the big people to eat and for the little ones too, if they wanted it. No surprise, they chose candy! But I really liked having a healthy treat. I always make pumpkin pie by following the recipe on the back of a can of Libby's canned pumpkin. That's about as homemade as I usually get with pumpkin pie--I love it. And for the cookies I tried a new recipe. Do you remember when I mentioned that I bought a copy of Clean Food (awhile back) and was disappointed to see that it is mostly gluten free and vegan, so not what I was wanting? But I vowed to salvage the situation by using and adapting as many recipes as I can. These cookies are the Banana Chocolate Chip cookies from the Spring chapter and they are so yummy!! They are sweetened mostly with mashed banana but with a little maple syrup and of course the chocolate chips. I have another similar recipe that I also like and make a lot, but these are cakier and somehow more banana flavored.

Banana Chocolate Chip Cookies from Clean Food

2 mashed bananas
1/4 c. canola oil
1/4 c. maple syrup
1/2 t. vanilla extract
1 c. rolled oats
2/3 c. brown rice flour (I used whole wheat)
1/4 t. baking soda
1/2 c. shredded unsweetened coconut
pinch of salt
1/4 c. chocolate chips (I added about a spoonful extra)

Preheat oven to 350.

Combine the wet ingredients in one bowl and the dry in another (oats through salt). Stir the wet into the dry and then fold in the chocolate chips. Don't overmix it.

Drop onto parchment lined baking sheets (I use a little cookie scoop). Bake at 350 for about 15 minutes or until lightly browned.

I love these with a glass of milk. Enjoy!

Sounds yummy! We had a very early dinner before trick-or-treating of pumpkin soup and bread and kale chips this year, which worked out beautifully, cause no one ever wants to eat real food when they have five pounds of candy to devour.
