I seem to be developing a theme in our dinners--snack foods. Here is dinner from a few nights ago--potato skins, salad, fruit and green smoothies. That's balanced, right?? It was actually quite yummy, at least for me. I had a bag of organic potatoes from Trader Joe's that needed using up. Ditto with half a tub of sour cream and some green onions languishing in the vegetable drawer. You know how it goes.
Green smoothies up the nutrition of any meal . . .
and they are so popular with my children, who think I make the best smoothies in the world! That warms my heart. I hope they always think so.

Just found your beautiful blog recently. I wanted to say I'm sure in years to come they'll be telling everyone that no-one cooks like their mother and calling you up for family recipes. In my mother's case, recipes she has long forgotten she ever cooked, because those are the ones I remember the best!

We love light dinners in the Summer...I am going to make the fried zucs soon and one of my favorite meals is a big bowl of popcorn and a smoothie. The smoothie def makes it a healthy meal ;)
