healthy baking update: my new favorite healthy cookie

As you know I've been interested lately in finding yummy but super-healthy recipes for baked goods. It's not easy! I've made these cookies once before (they are sweetened only with mashed banana!), but this time I made one small change because of my current no-sugar kick. Instead of dark chocolate or chips, I decided to try unsweetened carob chips. They are surprisingly delicious! I've been off sugar for two and a half weeks now, so these tasted plenty sweet to me. They were actually a real treat after having NO baked goods or cookies for awhile. Find the recipe here (and a much prettier photo) and sub unsweetend carob chips for the chocolate.

Also, a note about ingredients: these cookies are expensive to make, with the carob, the coconut oil, and the unsweetened coconut (look for the kind that is very finely ground for baking). Nonetheless, I think you still come out ahead when you compare them with the baked goods at the health food store.

I am vivacious vegan, and I have a blog too. I jsut looked over your blog and it is precious! I noticed you are getting into healthy food and I wanted to let you know I have an entire blog dedicated to veganism. I also saw you have Clean Food, I also have that book, and I love it, but I am not thrilled with all the sea vegetables in it. I cannot buy them around here, I live in a small midwestern town, but I just leave them out. Anyway, if you would like to, you can pop over and I can help you figure out some ingredients you may not know...

I am always looking for cookies that aren't filled with butter and lots of sugar. I really will try those cookies since I have some bananas just hanging out waiting to be made into bread or something!

Interesting! I'm always trying to find ways to make healthier cookies, it is very difficult. I have found a couple winners, but theres always room for more.

I've been trying to do the same thing, sorta(no processed sugar). I've been using brown rice syrup in my baking with pretty good results. I am definitely going to try these. I made some similar cookies, Banana-maple oatmeal, from the Fatfree Vegan Kitchen website. They were good too, but I still want to try these. Thanks for sharing the recipe.
