lull week

I anticipate my blogging is going to be pretty sparse this week, as we adjust to being on vacation (!) and just generally shift gears. We had a very lovely weekend but I was camera-free for most of it. Yesterday Rainer and I ended up sleeping through our first scheduled beach trip of the summer (boo! I felt really dumb about that, but on the other hand, a mother-son nursing nap is pretty darn sweet). I did manage to take a picture of these natural crisp rice bars. They are yummy--made with brown rice crisp cereal and brown rice syrup plus natural peanut butter. We pressed in a few dark chocolate chips for good measure (that is the only part Rainer wants to eat). I had never used brown rice syrup before--here's what it contains: organic brown rice, pure filtered water. Who knew rice could be made into a syrup? For some reason I really like that idea. It's pleasantly sweet and mild and no weird zing like agave syrup has. This is the one I used.

I tried these last night and it took mere minutes and was tasty... YUM! But they fell apart when I sliced them and as everyone ate them, chunks would fall off. Any thoughts?

Heather--pretty much the same thing here. They hold together okay as you lift them to your mouth, then all bets are off once you take the first bite. My only thought is to seat the child at the table when eating these . . . (actually, maybe a bit more brown rice syrup next time? to make them stickier??) Thanks for giving your review.

i love the idea of those bars..i have been making my son wheat free sugaar free snacks lately sicne he is more of a snacker then a whole meal eater...found a great recipe for sunballs nad we switched the maple syrup to applesauce but i dont think that owuld work here?? we dont use any sweetners here so i was trying to think of something else that would work as a binder for them? any suggestions?

Hi Lex, no I can't think of a non-sugar binder because you really do need something sticky, but I think the brown rice syrup is pretty healthy as sweetners go and sort of just minimally sweet--less so than maple syrup or honey. Good luck!
