another healthy cookie

I was inspired to make healthy cookies again when I saw Angry Chicken's post on Friday. I'm very much in the "healthy cookie" mode right now. These ones are cakey--there's no getting around that--which is fine as long as you are expecting a cakey cookie. Angry Chicken compared them to a muffin top, so we called these the "muffin top healthy cookies" in order to distinguish them from the other healthy cookies.
Per Amy's suggestion in her post, I added some flavorings: orange zest and cardamom. Yum! I also used the milk chocolate chips, hoping to entice the children, but they'd be great with the dark chocolate too. All the children did eventually come around to liking these, although they were a bit reluctant at first. To me they taste fantastic, especially once you get used to the cakiness (because I'm not normally a cakey cookie person).

How was your weekend? Ours was summery, with lots of cooking. The zucchini are coming on strong in the garden, so I'm gearing up for zucchini in everything. We have a million plants this year because last year from time to time I actually had to buy a zucchini at farmer's market or do without--unheard of, I know. I think it's because they were planted so very close together last year, or that was my theory. And speaking of farmer's market, Faith actually went with me and the babies yesterday (with Dieter and Rainer in the double stroller and us two walking). It was fun and different having her along. Alas, though, I got no studio time whatsoever. Oh well, I guess I'll set my sights on next weekend for that. Happy Monday!

Sounds like you had a wonderful weekend. I must try those cookies. They look very tasty.

Our weekend was pretty low key. I bought two new books, one crochet and one fruit desserts. We went to a park and did some yard saleing. Jake is sick so we stayed pretty close to home and watched alot of movies.

I need a healthy cookie right about now (: have to try out that recipe. Zucchini in everything sounds great, my zucchinis last year became vicitim to some bug-hopefully they will do better this year.

Zucchini in everything is my favorite! It's good in dinner and dessert in my book. I also have everything to make those cookies...so tonight I'm whipping them up in the kitchen.

I'm impressed that you make cookies every week! It's more of a once every month or two splurge here, but it would be nice to have snacks on-hand (if I could hide them from my husband!)
