Faith and I needed a quick and easy vegan lunch for today, so I made this black bean soup. I really love this soup. Here's how you make it:
Take 2 cans of your very favorite black beans ( I like Sun-Vista), undrained, and dump them in a pot with 1/2 cup fresh salsa, 1 T. chili powder, and 1 cup broth (I used 1 cup water + 1 t. "Better than Bouillon" vegetable base).
Bring to a boil.
When it has simmered a little (not much), blend it with your stick blender, a lot or just a little--it's up to you. Incidentally, I think a stick blender is one of those gadgets that's "worth it" in the kitchen. You can make lots of healthy blended soups without having to deal with hot liquid in the blender.
That's it--enjoy! I served this with avocado slices and a couple tortilla chips, but it is delicious plain as well.

Looks great. I am following your Vegan till Six eating plan with interest. I am not sure if I would give up some things on the list but I love hearing of all the yummy things you are eating.
I hope you are all well and looking forward to spring. Our first offical day of Fall (autumn) in Australia... At least great apples are coming back to the stores!
We've also been eating more beans. Lou politely asked us to cut back as the aftermath of all the bean eating has been slightly embarrassing in school :)

I love black beans- I made them with pineapple salsa last week - yum! But your soup looks delicious too! I saw a recipe once that used the residual liquid from cooking a ham in coca cola to make black bean soup!
I love that black bean soup. I make one exactly the same way, except I blend half of it and leaf the other half chunky.
I love your idea of slicing avocado in it. I just found a recipe for black bean burgers yesterday in my new Gourmet magazine. Yum.

Yummmmmmm. Made this today for lunch. Came together quickly and quite easily. I added some cumin as I'm a complete cumin addict. I think it added a nice depth of flavor to it! Ate with some soft tortilla strips for dipping. Also left half unblended for a bit of chunk! Thanks for a simple recipe for one of my favorite soups! I always thought it would be too complicated, but this was just my speed!

Yum! I came over here from The Crafty Cow and am so glad I did! I love black beans and haven't made black bean soup in a long while. I have a similar recipe from Cooking Light magazine that I used to make so often. I am now the proud owner of a stick blender (thanks to my hubby who gave it to me for Christmas) so I will be making some black bean soup next week. I'm enjoying poking around your older posts!
