My New Favorite Zucchini Recipe

Zucchini Soup, yum! I've been meaning to make this soup for a few days now, but with one thing and another, I just got around to it today for lunch. Wow--it is a keeper! I could eat this for lunch every day. I got the recipe here. I lightened it though--instead of cream, which is called for, I used 2/3 cup of whole milk. It was delicious and I didn't miss the cream at all.
I served it with homemade croutons made from the ends of some artisan breads. To make croutons, just cut your bread into small cubes and stir them around in a hot skillet with some melted butter. They are so delicious. This is how my mother did it and I always loved them, even with regular white bread from the store.

Rainer loved it too and kept asking for more. I spooned it into his willing mouth.
Okay, so now I have a question for you. I've been growing sprouts this summer, but what do I do with them? I know about putting them on sandwiches, but I haven't really been having sandwiches for lunch. This is a 3 part mix of alfalfa, broccoli and radish sprouts and is somewhat spicy. I eat some out of hand but lots have gone to waste. Any ideas?

as for the sprouts, how about in a pita with some hummus and cucumbers? or do you know anyone who has a pet bunny?

mmm that looks yummy! i'm pretty much just a boring old peanut butter + sprout sandwich girl. i've never gotten clever with my sprouts either. good luck!

A lot of people put sprouts into green smoothies--a little cucumber, avocado, apple, lemon and sprouts--maybe some kale.

I've always wanted to try to make sprouted bread, but am a little nervous to try. It seems hard.

Ooh, I really want to try that soup! Looks delicious.

I've only ever had sprouts on sandwiches, with either cream cheese, hummus, or avocado spread. Teo suggested maybe salad or soup?

They are good in tacos or on top of egg dishes. I used to eat them on top of goat cheese on top of rice cakes - that was good too. But I think I added basil and spinach too.

I treat them like an onion or green peppers - they go in or on everything, even veggie pizzas. They're great in pita bread with hummus, banana peppers, tomatoes and gorgonzola cheese

I like the cloth napkin under your spoon...do you always use cloth napkins? Do you make your own or purchase?

(I never use sprouts so I can't offer any suggestions).

That soup looks yummy - and I love the idea of making croutons - I plan to try that! As far as sprouts go - sandwiches and salads are as creative as I get. I guess it makes sense to use them as a topping for just about anything, but the idea of cooking them sounds odd to me.

Hello.. i have just arrived here. Your sprouts .. well you can sprout all sorts, including lentils and sunflower seeds which are my particular favourite. I add them to salads (any kind) but my favourite thing to do with them is to sprinkle them onto soup with a good splodge of extra virgin olive oil and a big hunk of freshly baked bread. Yum. xx

I hope you find this comment. I am perusing suggested blogs this afternoon and sow your post. My best friend would eat these as a child sauteed in butter and garlic. She first started making them in her easy bake oven, if you can believe that. They are yummy!
