Delightful Zucchini Casserole

As promised, I'm trying out new zucchini recipes as our harvest goes along. This is an old recipe that's been in my "to try" pile for literally years. My mom gave it to me, and she got it from her friend in Fresno, which is where I grew up. This friend has a reputation for being a very good cook. Now I will say, this recipe is old fashioned, from the 70's or 80's probably, and needed some lightening, which I did do, but I'll lighten it even further next time. Nonetheless, it was delicious, and I highly recommend it. It's yum!
Baked Zucchini

2 lbs. zucchini or summer squash (sliced and par boiled slightly)
1 lb. cubed jack cheese

Place the sliced, par boiled squash and the cubed cheese in buttered [I used Pam] 9x13" dish.

Mix together:
4 eggs
1/2 c. milk
2 t. baking powder
1/2 t. salt
3 T. flour
2 T. parsley [I omitted this]
1 or 2 cans diced Ortega green chiles
1/2 c. butter [OMG! That is insane! I used 2 T. melted]

Pour the mixture over the cheese and squash. Bake at 350 for 30 or so minutes until lightly browned.

For next time: I'll lighten it further by increasing the zucchini and cutting back on the cheese. It needs that, but this is really yummy, like a crustless quiche sort of.

Friday! Last day of school for me. Jacob is graduating high school and my mom is hosting a little gathering tonight to honor him. Actually, he didn't want to go through the ceremony last night and no one forced him to do so. I didn't go to mine and Brian, Jacob's dad, didn't go to his either. It makes sense to me that we produced a child who might not be interested in that sort of thing (although I'm sure Faith will go to hers). Anyway, no big drama about that. I'm just very proud of my boy who is so smart and creative and quiet and really does think outside the box, which is a special quality. Pictures tomorrow of the graduate. Happy weekend!

Ooh, yummers. Can't wait until we get some zucchini to try this out. I giggled at your comment on the butter, I was making a custard last night that called for 1 1/2 cups of cream (!). I just couldn't do it, after the first cup I couldn't make my hand add any more! It was still delicious though.

Congrats to the grad! He sounds like a charming young man.

Hello there, I made something very similar last night. I sliced young zucchini and put to a pan with boiling water for 30 seconds, then set aside to dry. Meanwhile in a bowl I mixed 3 eggs, 2 tbsp of flour and 450ml of milk. After 20 minutes I added 2 cloves of garlic, pressed and 1/2 teaspoon of ground rosemary. Grease the baking dish with butter, put the zucchini, sprinkle with salt and black pepper, pour over the mixture, lay thin slices of cheese on the top and bake for 30-35 minutes. Serve with veggie salad and bread and it's delicious ;o)

Looks like a great Zucchini recipe. I didn't know you grew up in Fresno. :-) So glad to hear Rainer is doing well. Congrats to Jacob, the graduate. :-) Hope you have a nice party tonight for him. And enjoy your summer. I am sure you can't wait to do things you have on your list that you posted. :-)

oh that looks delicious!! I made a list too for this summer...so many nice things to do...hope we both can manage to do all!! Such a nice and positive start of the summer...thanks for giving the idea I am so looking forward to it...unfortunately we are having school till the end of july...but outside schooltimes we'll start with the summer to do list...

Yum for zucchini and congrats on the graduation!
Its a good time of year that combines zucchini and graduations. Your zucchini recipe looks quite yummy-zucchini is my favorite summer veggie. As a kid, we used to love zucchini sauted with tomatoes and onion then topped with stuffing and baked in the oven. Now it is one of my favorite comfort foods. Enjoy your first weekend of summer!

thanks for the recipe...we made it tonight for dinner and it was great! I added a little more zucchini and used maybe half that amount of cheese and butter, and it turned out really well.
