More Recipe Reviews from "Cooking With Kids" and Finally Some Good Rainer News!

Over the weekend I got a chance to try some more of the recipes from Cooking With Kids. I made the Grant bread, which is a yeast bread that has no kneading or shaping (just mix it in a bowl, dump it into the loaf pan, and let it rise, then bake), the frittata, and a lemon loaf cake. All were good. It was especially nice to learn how to make a frittata because that is something I've always wanted to make but never have--and it's so light and healthy with its eggs and fresh vegetables.
The bread I had some issues with--what can you expect with such a simple recipe? It certainly doesn't have a fine crumb--that's fine, but my issue with these types of bread recipes is that I can't seem to get them totally cooked through. Still, it made quite nice toast and I wouldn't mind trying the recipe again and baking it in two smaller loaf pans. I do love fresh bread.

The loaf cake was the hit of the evening--it has fresh lemon zest in the batter (I used lemons from the yard) and a syrup of lemon juice and sugar is poured over while it is still hot. It was light and delicious.
And finally I can report some good news about little Rainer! His bone marrow results came in early and preliminarily it looks like there are no leukemia cells left! Hooray! Next step is to have the sample analyzed at a different lab using a different, more sensitive technique. If that test shows there is no MRD ("minimal residual disease") then he can move on to the next treatment phase (more chemo). Otherwise he'll have two more weeks of induction. I'm very anxious for him to come off this induction phase because the corticosteroid that he is on has made him weak (and puffy). I'm hopeful he'll be feeling better soon. Either way, it's wonderful to get a piece of good news.
