Yummy Baked Oatmeal

I hadn't made this baked oatmeal recipe in a long time and was surprised at how good it is. Total yummy. This is baked up in an 8x8 glass dish. Leftovers can be refrigerated and heated up later in the week for a very quick work morning breakfast. The raisins plump and soften during the long baking and the whole thing is like an oaty bread pudding. I like that sort of thing. If you do too, here's the recipe.

Quaker Oats Baked Oatmeal

2 1/4 cups Quick cooking oats, uncooked
or 2 3/4 cups Old Fashioned oats, uncooked
2/3 cup firmly packed brown sugar
3/4 cup raisins or Craisins
1 teaspoon ground cinnamon
1/2 teaspoon salt -- optional
3 1/3 cups skim milk
4 egg whites -- lightly beaten
(or 1/2 cup egg substitute)
1 tablespoon vegetable oil
1 tablespoon vanilla
fat free milk or nonfat yogurt and fruit -- optional

Heat oven to 350 degrees. Spray 8-inch glass baking dish with cooking spray.

In large bowl, combine oats, sugar, raisins, cinnamon and salt; mix well. In medium bowl, combine milk, egg whites, oil and vanilla; mix well. Add to dry ingredients; ix until well blended. Pour into baking dish.

Bake 55 to 60 minutes or until center is set and firm to the touch. Cool slightly.

Serve topped with milk or yogurt and fruit, if desired. Store leftover oatmeal tightly covered in refrigerator.

I'm still a little bit sick and have been really contemplating why this cold is hanging on for so long--I usually don't get sick at all. I don't think I've been taking care of myself as well as I should. Yesterday I took a nap while Ken watched the boys and it is unbelievable the difference a little sleep made. I don't usually nap ever, but it made me realize that I need to get more sleep at night. I can't help that Rainer still wakes up frequently, but at least I can get to bed earlier. I need to eat more oranges too. And etcetera, but you get the idea. Health is so important.

Last night my mom came up and watched the kids while Ken and I went out for dinner. It was so fabulous to get out with him without any babies!! Highly recommended. The teens could watch the little boys themselves of course, but we don't really ask them to for that long. This way dinner was served, babies were fed, things were picked up; that sort of thing.

I'm off to work this morning, but looking forward to having an extra day off next Monday. Hooray!

I just got over a nasty little cold that lasted nearly two weeks. I got it from my brother and he had it for nearly three...so something is going around

It sounds even from this post as though you have the most enormous amount to fit in to your time...so am completely in awe of the fact that you have all these lovely children, meals out with your husband (I know the last two are lovely, but they still involve energy on your part), a job...and are somehow also managing to make wonderful fabric boxes in dreamy materials!

I do hope you feel better very quickly. x

That tree fabric is one of my very favorites. I have some of it but haven't come up with anything worthy of being made with it yet.

I'm sorry to hear you're still feeling sick! Maybe in addition to getting outside for 15 minutes every day, you can also try to go to bed 15 minutes earlier every night. Easier said than done, I know...
