Three

Yesterday my little Dieter turned three. It seemed like such a miracle when he joined us and now I can't believe how he's grown and how he continues to charm us daily. He is such a wonderful addition to our family and I can't imagine our lives without him.
As you can see, he insisted on wearing his bunny costume through most of his birthday evening. That's right, his bunny costume from Halloween. At least he's getting some use out of it. I was getting a little worried that I wouldn't be able to get a shot of him in his crown, but luckily he decided to change before cake.

I tried two more recipes from my Deceptively Delicious cookbook. One was for these little cakes with pumpkin puree. It was super easy (it uses a mix) but with a burst of nutrition from the pumpkin. She also cuts back on fat in all her recipes, and you could tell that the texture was not quite as velvety as full fat, but these cakes were tasty. The other recipe I tried was her macaroni and cheese with pureed beans and cauliflower. Ugh--kind of tasteless. The problem was not the healthy add ins--I couldn't really detect them. The recipe just lacks flavor. I should have stuck with this recipe, which is also a healthy mac and cheese, and is tried and true and very flavorful.

All in all it was a fun day with balloons and trips to the park and cookie baking and outside playing. Followed by an amazingly leisurely present-opening session (in which he was allowed to play with each toy for as long as he wanted before opening the next) followed by cake and cookies (too much sugar, I know, but I love the tradition of number cookies in the shape of the child's age and let's admit it--children like cookies way more than cake). Happy birthday Dieter! You are our fun, imaginative, talkative, sweet, affectionate, brotherly, animal loving little guy and I can't wait to see what you do next.

I love the cookies- they are such a great idea! I tried adding pumpkin to my french toast this morning after reading your post yesterday and it was really good (my baby thought so too!)

Happy birthday to Dieter! He is just glowing--it looks like he really enjoyed his special day.
The bunny costume and the 3 cookies are SO cute! you're such an awesome mom.

Thanks for the link to the mac and cheese recipe, too. I also have the DD cookbook but I haven't tried many of the recipes yet. You're the second person to tell me the macaroni recipe in Jessica's book isn't very good. We've made the yogurt popsicles many, many times though and they are delish. The beef stew on page 83 was good too. We'll have to try the pumkin cake next. yum!
