Insane Last Minute Cookie Making Extravaganza

With work extending through the 20th of December this year, and with how busy we've been, I hadn't gotten around to making any Christmas cookies at all. Normally I would have made at least some ahead and frozen them, but not this year (most likely because I've been sewing a lot more). It is our tradition to have a big variety of cookies to last us throughout the holidays and to share with our neighbors and my parents. That almost didn't happen until yesterday when I got it into my head to make seven different types of cookies on one day.
One crazed afternoon later, I had four batches of cookies and two batches of dough. This morning I got up at 5 and made the last batch, baked up one dough, and worked on these cut- out cookies throughout today. Whew! Almost not worth it, but now we have our nice variety anyway. Mental note for next year: start earlier.

Here's what we ended up with: cut-out sugar cookies, salted nut bars, almond-orange shortbread, Sandies, Snappy Turtle Cookies, Perfectly Peppermint Brownies and Peanut Butter Surprise cookies. All delicious and well liked. The shortbread is new this year (that's another tradition, to try a new recipe each year) and it's yummy. I hope the others like it.

We're trying to get the Solstice tea together for this afternoon, but it's hard. Every equinox and solstice I think I'm just going to do tea and simple cake, but every time it ends up being more of a real tea. Happy Solstice to those of you, like us, who are still celebrating!

Wow! You're very brave doing so many in one day - they look fantastic though. I'd have like to have seen a picture of your kitchen at the end of all that baking!

I love the solstice too. One of these years I'm going to have a solstice party with plenty of candlelight and evergreens. Merry Christmas, Mary Beth!

I'll bet you were exhausted! They all look SO GOOD! Cookies are my absolute weakness, but I was a good girl this year. We only baked once. But oh I wanted more ;o)
